Tuna in Tamarind Sauce

 

Ingredients

1.5 lb (675g) tuna steaks, filleted

3.5 floz (100ml) fresh lime juice

2 tablespoons tamarind purée

3 tablespoons soy or sunflower oil

2 to 4 garlic cloves, chopped

2 inch (5cm) cube ginger, chopped

1/2 teaspoon ground cloves

1 to 3 fresh green cayenne chillies, chopped

6 to 8 curry leaves, fresh or dried

salt to taste


Method

1. Cut the fish into bite-sized chunks and wash them.

2. Mix the lime juice and tamarind purée in a non-metallic bowl.

3. Add the fish chunks, cover and refrigerate for 2 hours.

4. Using a flat frying pan, heat the oil and stir-fry the garlic, ginger, ground cloves, chillies and curry leaves for about 1 minute.

5. Add 1/2 pint water (300ml) water and bring to a simmer.

6. Stir in the tuna and its marinade and simmer for about 20 minutes.

7. Add the salt to taste and serve with plain rice.
