Thai Starters and Desserts

Thai Starters
Either served on a plate to seated diners
or on a platter at a stand-up situation:
We have included a few starters from further afield than Thailand.

Choose your party starter course as follows:
•  Pick three starter dishes coloured
red
  Plus pick three starter dishes coloured green
And you have your starter course at the prices below.

Choose three protein Thai starters from those listed below in red:
Barbecue Chicken
  ~ A bite-size chunk of chicken breast marinaded in syrup of Thai spices and sweet chilli sauce then baked.
Satay Beef ~
Strips of beef skewered onto bamboo sticks and marinated in a home-made spicy peanut sauce, then lightly grilled. Served with home-made Kacang Peanut Sauce (see below).
Chicken Satay 
~ Chicken breast strips, marinated in a spicy peanut sauce on a skewer, then grilled. Served with peanut sauce.
Golden Bags
~ Minced spicy chicken inside a wrapping of wonton pastry, then deep-fried. 2 per diner.
Meat Ball on Skewers (Look Cheen Pin)  ~ 
A 2cm ball made from ground beef, Thai spices, chilli and spring onions, baked then skewered.
Ribs  ~ Si-Khrong Moo Tod 
~ A pork spare rib marinated in Thai spices then oven-baked.
Spring Roll, Duck 
~ A deep-fried small roll with shredded roasted duck, and vegetables. 2 per diner.
Spring Roll, Pork
~ A deep-fried spring roll c8cm x 3cm containing pork ground with garlic, galangale, carrot, beansprouts, and lemongrass.
Spring Roll, Vietnamese  (Cha Glo)   ~ Rice-flour wraps, filled with strips of marinated cooked pork, papaya, carrot and beansprouts.  (served cold)
Fish / Seafood
Crab Claws
~ A breaded Crab claw, deep-fried and doused in a juicy Thai spice paste mixture.
Fish Cake, Thai 
~ Tuna, Thai flavourings, potato and maize flour crate firm disks which are deep-fried.  2 pieces per diner.
Prawns Cloaked  (Kratak)
~  One King Prawn marinated in Thai spices, cloaked in filo pastry and deep-fried.  Additional 50p per diner.
Prawn, Stir-fried Chilli  
A large King prawn stir-fried in soy oil with red chilli powder, fish sauce and palm sugar.
Additional 50p per diner.

Choose three vegetable starters from those listed below in green:
Pickled Vegetables
~ A selection of raw vegetables, eg: cauliflower, carrot, shallots, baby corn and white cabbage pickled in saké (rice wine), fish sauce, palm sugar and sweet lime.
Spring Roll, Vietnamese (
Cha Glo) ~  Spring rolls, with rice-flour wraps, filled with strips of papaya and carrot, beansprouts, lemon grass. (served cold)
Spring Rolls, Thai Vegetable 
~ Filled with a mix of chopped vegetables, including Thai eggplant, beans, mushroom, ground coconut, roasted crushed peanut and coriander, plus the fragrance of lemon grass, holy basil and kaffir lime.
Spring Roll, Vegetable
~ A deep-fried spring roll c8cm x 3cm vegetables, garlic, galangale, beansprouts, and lemongrass.
Thai Fritters
~ A mixture of straw mushrooms, bamboo shoots, water chestnuts, sweetcorn. peppers and beansprouts immersed in a herbal Thai-spiced chickpea-flour batter, then deep-fried, fritter-style.
Thai Southern Vegetables, Spicy Roast 
A selection of long beans, snap peas, baby sweetcorn, eggplant etc. are doused in a sauce of coconut and Thai flavours then roasted until they are dry and bite-size.
Thai Northern Vegetables, Spicy Roast 
~ Chunks of Oriental vegetables including water chestnuts, bamboo shoots, carrot, broccoli, peppers, and pak choi flash-fried in a dry sauce of bean paste, chilli, soy sauce and tamarind then roasted until they are dry and bite-size.

Please note the prawn crackers and following sambols will served at no extra cost with your Thai starters. 
Prawn Crackers ~ Three types: Chinese, Indonesian and Vietnamese. 6 crackers per diner.
Cucumber Sambol ~ Cucumber, de-seeded and finely sliced into matchsticks (Juliennes) embalmed in thick sweet soy sauce.
Nuoc Cham ~
Vietnamese Fish Sauce with red hot chillies
Peanut sambal (Kacang) ~ home-made from roasted peanut, tamarind purée, lemon juice, cummin, coriander, chilli, lemon grass, and five spice powder. Nothing from a manufacturer’s jar compares.
Prig Nam Pla ~
Fish sauce with Thai bird’s eye chillies
Sweet Chilli Dipping Sauce  ~ 
Red chillies in a syrup.

Thai Desserts

Diners may feel full at this stage so we make sure our desserts are light and fresh and easy eating. Pick one dessert.

Banana Fritter  ~ Banana mashed with nutmeg and cardamom then embalmed in a light batter, fried, sprinkled with cinnamon and served with creme fraishe.   £2.50 per person
Deep-fried Organic Vanilla Ice cream 
~ Not practical for more than 30 diners but a treat for those who have it.  Vanilla  icecream is wrapped in a filo-pastry parcel, deep-fried, dusted with icing sugar and served fast with a lime wedge.   £2.50 per person
Fruit Satay 
~  What a great pudding it makes for your party.  Cubes of fresh fruit are skewewed, about five pieces per long skewer, one skewer per diner.  It is glazed with palm sugar syrup.  We use only firm fruit with contrasting colours.   Nice with apples, nectarines, peaches, mango, banana, kiwi fruit, etc, and if possible use star fruit for dramatic effect. It is lightly grill and serve hot to table with creme fraishe or ice cream.   £2.50 per person
Mango Surprise  ~ A syllabub or smoothie of yogurt, cream and mango purée topped of with sliced mangoes in syrup.  Served cold, ideally in a stemmed glass.   £1 per person
Moyra Banana  
~ A heated sweet and syrupy sauce made from palm sugar and butter ghee, amalgamated with chopped nuts, dates and golden sultanas, flavoured with ground green cardamom is poured over banana, and served with creme fraishe.   £1.50 per person
Patishapta Pitha  ~ Bangladeshi Sweet Pancakes  ~ Not practical for more than 30 diners. Pancakes filled with whipped soft cream cheese and thick soured cream, sweetened with sugar and spiced with ground green cardamom and grated nutmeg, dusted with icing sugar. Served cold with hot date palm or pomegranate syrup.   £2.50 per person
Pyasam ~ Coconut Rice Pudding  ~ Pudding rice flavoured with coconut milk and cream, topped off with a coulis of exotic fruits and nutmeg.  Served hot.   £1.50 per person
