THE COURSE
Your Japanese Sushi 3 Hour Hands On Cookery Course will start at 10am. Welcome tea or coffee with biscuits. Pat will begin the course, talking about Japan and its unique cuisine.
Using your Recipe Sheets, Pat will show you the essential ingredients needed to make and flavour Sushi. Pat and Dominique will cook with you the following preparations and dishes. Your meal will serve at least 6 people.
-
Sushi Nori (alternatively called Sushi Roll, Maki Sushi or the California Roll) - using Nori Laver (roasted seaweed), and a bamboo mat. Seaweed with flavoured rice and your choice of filling - cucumber, chives, smoked salmon, crabsticks, asparagus, omelette, pink pickled ginger, red and black roe and wasabi, then roll into a round, a square or a tear-drop shape. Using a very sharp knive, you will then cut it into mouth-sized pieces.
-
Inverted Sushi, - using a bamboo matt and cling film. Rice on the outside, of the Nori Laver, and roasted white and black sesame seeds on the outside of the rice. This is quite a tricky sushi to make, but there is a method to it.
-
Terriyaki Sauce - Pat will show you how to make the marinade for the beef steak.
-
Tamago - Dominique's favourite. Marinated beef steak, cooked rare, thinly sliced, flavoured rice, a little wasabi, all inside a thin Japanese omelette. Dominique will make one omelette and then you will cook the rest.
-
Edomae (alternatively called Nigiri) - piece of raw fish layed over a vinegared rice ball.
-
OR
-
Temaki (alternatively called Hand Rolls) - hand-rolled cones of roasted seaweed (Nori Laver), stuffed with rice and your chosen filling.

CUSTOMER REVIEWS
October, 2007 - Just a quite note to say thanks for Saturday. We both enjoyed it. I think we both learned a lot and also had fun. The food we took away went down well with Sarah's family. I'm looking forward to throwing a Sushi Party now so that we can show off our new skills.' Iain Larkin, London.
