Catering Overview

How to please your guests
Most people want comfort-food at a party. Your guests arrive in high expectation and what they want is what we give; ample quantities of very tasty home-cooked food. 
The most economical way to achieve this is to serve a buffet main course, using chafing dishes (those free-standing stainless-steel, lidded  rectangular food trays, heated by ‘fuel-gels’ – odourless naked flames).  We supply them at no extra charge when you use our waiters.
When the food is served by our friendly waiting staff the portions are under control so that every diner gets a fully explained, ample plateful of the items she/he actually wants. Those who want more are encouraged to return for another serving and they get it!.  We have been known to serve fourths to certain diners!!! 

Too hot/ too mild?
So what about ‘heat’ levels?  Our technique is to cook all the dishes you choose at mild to medium.  We have never had a diner say “it’s too hot”.  Neither have we had a diner complain that things are too mild!  Whichever menu you choose, we supply a ‘hot sauce’ for the hotheads and there are always some, who genuinely enjoy piquancy.  We also supply a Yoghurt or Coconut Sauce (for the cool ones amongst your guests).

Tables or standing?
Seated guests enjoy the party more than if they have to stand and manage a plateful of food, their drink and socialising.  But seating isn’t always possible, so if our personnel are serving, we’ll make it work seamlessly.

How many Courses?
Big decision.  You need to choose whether to have canapés and/or starters and indeed a pudding. We can supply you and your guests with some amazing choices of both.  It’s all down to the format you want for your party not to mention budget. The most important course is the main course and it may suit you to have just a main course and as we say we'll 'fill 'em up' with it!.

The Ideal Main Course
The ideal Indian main course mix is five main dishes. To get a good economical mix, two dishes should be meat or chicken, one should be vegetable, one lentil (dhal) and one rice.  Each dish has its own spicing and personality, and together we ensure that you get the perfect mix of colour, texture, taste and nutrition.  The same philosophy applies to our other cuisines; Thai, Oriental, Middle Eastern, Caribbean and Mexican.

We price our main courses as a five-dish menu. If you decide to go for less than five (ie you choose to go for one chicken, two veg and rice), it cannot save you money. The guests will still eat the same volume of food, and it's the chicken or meat dish they make a bee-line for, so we have to supply double the quantity of the chicken dish, and the cost is the same. 

To choose your five dishes simply use our unique colour-coded menu and you have your main course fully priced.

Complaints?
The only complaint we enjoy is “I can’t eat another morsel!”  Luckily we hear it often at the parties we do. In other words we will supply enough food for all. 

Is there any food left-over?
Once we have finished service and cleaned up, we will discretely depart leaving your party in full swing.  There may be ‘left-overs’.  It’s your food and if you have containers (bowls, pans etc) we’ll put what ever is left over into them. It is not unknown for certain of your guests to have a midnight or dawn feast on the left-overs!  And why not?  But if they don’t, you can eat them yourself at a later date.  Try to get the left-overs into a fridge or freezer as soon as they cool down.

We serve it  / you serve it
We don’t mind if you order the food without having us there to manage it. But please bear in mind that if you use our personnel, we also supply the chafing dishes (warming pans) at no extra cost and our crew know how to set up and manage them. They also understand the food, the service, portion control, how to relate to your guests, hygiene (all-important) and clearing up. We pay our crews generously so we can choose those whose enjoyment of the work shows. They behave and dress discretely and won't drink your drink unless you offer it and they will not eat your food. Most importantly they take your worries off you. Not only that, having hired-in staff looks better in the eyes of your guests.
So please don’t spoil the ship for the proverbial ha’porth of tar by using students or junior relatives!
