Don't use the lurid red food colouring with those dreaded e-numbers, E110 and E124.  

It's made from coal, yes coal extract, hence its name tartrazine, and causes asthma attacks and hyperactivity in some children.

For years Pat Chapman has been specifying the use of beetroot powder as the natural colouring for  Tandoori and Tikka.

It's not as lurid, but it cooks to a lovely colour.
