The book begins briefly traces the history of the British Balti and takes a visit to a Birmingham Balti House kitchen. It then studies the utensils and specialised ingredients used, and continues with step-by-step colour photo sequences showing how to make basic items, like the all-important curry gravy, garam masala, ghee and paneer, etc. There are over 200 recipes, including 120 Balti dishes, plus further recipes for starters, rice and bread, accompaniments and desserts. There are descriptions, and pictures of every favourite dish at the Balti House. The book concludes with a voyage round the Asian store, a comprehensive Glossary, store cupboard list and a really useful index.
