This course will enable you to cook a full Mexican/Latin American main course with Dominique and Pat Chapman, which will serve at least 6 people.
The menu includes:
Patata Dulce Rellenos Con Gambos y Cangrejo (Peru) Shrimp and crab-stuffed sweet potato
A small halved baked sweet potato is stuffed with spiced baby shrimps, white and brown crab meat refried Lima bean mash, and sweet corn.
It is topped with grated cheese and grilled.

- Caribbean Goat (lamb if you must) Curry
- OR
- Guajolote Con Molé Poblano (Mexico) Turkey with bitter chocolate and chilli sauce
- PLUS
Chile En Nogada (Mexico) A large chilli stuffed with minced pork and crushed walnuts
Served with a white sauce of soured cream, decorated with red pomegranate seeds. Hailing form the Mexican Pueblo district, the colours of the dish, green, white and red, symbolise the flag! Dish uses Ramiro sweet red mild chillies which are subjecy to availabilty. Red bell peppers can be substituted.
Color Los Vegos (Chile) Red and yellow coloured seasonal vegetables in a sweet chilli sauce.
Carrot, sweet potato, parsnip, red and yellow capsicum peppers, squashes etc
Moros Y Cristianos (Cuba) Moors and Christians or beans and rice
A contrast of black and white. Spanish round-grained rice with black beans and fried bacon - that’s the Christian bit!
